Morita Shoube places a strong emphasis on traditional handcrafted techniques, placing quality at the forefront over quantity. Their aspiration is to establish a reputation as a premier producer of exceptional sake, viewing the flavor of their sake as a testament to the expertise and craftsmanship of the sake brewers and the company as a whole.

The brewery benefits from ample water resources, sourced from the subterranean streams of the Hakkoda Mountains. Originating in the lush beech forests, this soft water is enriched with minerals at optimal levels, enhancing the quality of the sake produced.

The brewery's ethos revolves around crafting sake from rice that undergoes polishing of 55% or less, sourced solely from Aomori Prefecture. Some of the specific rice varieties they utilize include "Hanaomoi," "Hanafubuki," "Hanasayaka” “Gineboshi”
