The brewery's ethos revolves around crafting sake from rice that undergoes polishing of 55% or less, sourced solely from Aomori Prefecture. Some of the specific rice varieties they utilize include "Hanaomoi," "Hanafubuki," "Hanasayaka” “Gineboshi”
